Instructions

1.Preheat oven to 375°F.
2.In a large oven safe pan, cook the Italian sausage over medium-high heat for about 5 minutes or until browned.
3.Add the onion and red bell pepper and cook for an additional 3 minutes.
4.Add spinach to the skillet and cook until wilted.
5.Pour the beaten eggs over the sausage-vegetable mixture.
6.Top with feta cheese.
