4 medium to large tomatoes
1/2 cup long grain white rice , uncooked
1 cup hot water
3 1/2 tablespoons basil pesto
1/4 cup pine nuts
1 tablespoon very finely grated parmesan cheese
1/4 cup grated mozzarella cheese , plus
1/8 cup grated mozzarella cheese , for topping

Instructions

1.Preheat oven to 375°F (190°C).
2.Cut off the top of the tomatoes and remove the insides.
3.In a small pot, cook the rice and hot water on low heat for about 20-25 minutes or until all the water has evaporated.
4.In a separate bowl, mix the cooked rice, pine nuts, basil pesto, and 1/4 cup grated mozzarella together.
5.Spoon the mixture into the tomatoes and sprinkle the remaining 1/8 cup grated mozzarella on top.
6.Place tomatoes on a baking tray and bake for around 20-25 minutes or until golden brown on top.
