1 1/2 cups arborio rice
1/2 cup white wine
5 cups chicken broth or 5 cups vegetable broth
1/2 teaspoon saffron thread
2 tablespoons butter
1/2 cup parmesan cheese
salt & pepper , to taste

Instructions

1.Heat the olive oil in a pot on medium heat for about a minute.
2.Once the oil is heated up, add the minced onion and cook for about 3-4 minutes or until the onions are translucent.
3.Add the arborio rice to the pot and stir for 1-2 minutes, or until the rice is lightly toasted.
4.Pour in the white wine and stir until the rice absorbs the wine.
5.Add the chicken broth or vegetable broth to the pot, one cup at a time, stirring constantly. Wait until each cup of broth is fully absorbed before adding the next one (this will take around 20 minutes).
6.Add the saffron threads to the risotto and stir it in.
7.Add the butter and parmesan cheese to the pot and stir until everything is combined.
8.Turn off the heat and season the risotto with salt and pepper to taste.
9.Let the risotto sit for 1-2 minutes before serving.
