Ingredients

1 cup breadcrumbs
1/2 cup black olives
1/4 cup red wine
4 anchovy fillets , chopped
1/2 cup olive oil
1/4 cup parmesan cheese
1 tablespoon capers
2 tablespoons pine nuts , coarsely chopped
3 tablespoons golden raisins , moistened in red wine and chopped
2 tablespoons parsley , finely chopped
salt and pepper
2 heads escarole
2 garlic cloves , smashed
1/2 cup chicken broth

Instructions

1.In a food processor, pulse the breadcrumbs, olives, anchovy fillets, capers, pine nuts, and parsley until finely chopped. Transfer to a bowl and mix in parmesan cheese.
2.Bring a large pot of salted water to a boil. Add the escarole and cook for 5 minutes until wilted. Drain the escarole and let it cool enough to handle.
3.Preheat the oven to 375F.
4.Lay the escarole leaves on a clean workspace and place a spoonful of the breadcrumb filling in the center of each leaf.
5.Fold the sides of the leaf towards the center and then roll up the leaf from the bottom to the top, enclosing the filling.
6.In a large pot, heat the olive oil over medium-high heat. Add garlic and cook until golden brown, then remove the garlic from the pot.
7.Arrange the stuffed escarole leaves, seam side down, in the pot snuggly so that they don’t move around. Pour the chicken broth and red wine on top and season with salt and pepper.
8.Bring to a boil, then put the pot in the oven and bake for 25-30 minutes until the escarole is tender and the filling is golden brown.
