Ingredients

1 cup uncooked instant rice
1 1/2 lbs sea scallops
1 tablespoon olive oil , divided
1/3 cup tawny port ( or other sweet red wine )
2 tablespoons lemon juice
1/4 cup chopped fresh parsley , divided
5 garlic cloves , smashed
Portuguese Style Scallops are a simple yet delicious seafood dish that is easy to make and pairs well with rice. The dish uses sea scallops, which are larger than regular scallops and have a meaty texture. The scallops are seared until golden brown and then tossed in a flavorful sauce made with tawny port, lemon juice, and parsley. Instructions

1.Cook rice according to package instructions and set aside.
2.Heat 1/2 tablespoon of olive oil in a large skillet over medium-high heat. Add the scallops and cook for 2-3 minutes on each side or until browned and cooked through. Remove from skillet and set aside.
3.Add the remaining 1/2 tablespoon of olive oil to the skillet and heat. Add garlic and cook for 30 seconds or until fragrant.
4.Add port, lemon juice, and 2 tablespoons of parsley to the skillet. Cook, stirring occasionally, until liquid has reduced by half.
5.Return the scallops to the skillet and toss to coat with sauce.
6.Serve scallops over rice and garnish with remaining parsley.
