Assaduras De Peixe, or Portuguese Fish Kabobs, are a popular dish in Portugal and other coastal regions around the world. This simple yet flavorful recipe features haddock fillets marinated in a zesty garlic and paprika marinade, then grilled to perfection on skewers. The result is a tender and juicy fish kabob with a slightly smoky flavor that pairs perfectly with fresh lemon and parsley. These kabobs are perfect for summertime grilling or served year-round as a light and healthy meal option.

Instructions

1.In a large bowl, mix together the crushed garlic, red pepper flakes, smoked paprika, and salt to form a paste.
2.Gradually whisk in the wine vinegar and water, continuing to mix until well combined.
3.Add in the crushed bay leaves and stir together.
4.Cut the haddock fillets into 2-inch cubes and add them to the marinade, tossing to coat evenly.
5.Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
6.Preheat a grill or grill pan to medium-high heat and lightly oil the grates.
7.Thread the marinated fish onto skewers and grill for 4-5 minutes on each side, until cooked through and lightly charred.
8.Serve the kabobs hot with lemon wedges and fresh parsley, if desired.

PROS

These fish kabobs are packed with flavor and have a tender, juicy texture.

They are high in protein and low in carbs, making them a healthy option for those watching their waistlines.

CONS

Haddock fillet is a mild-tasting fish, so these kabobs may not be as flavorful as those made with stronger fish such as salmon or tuna.

Handling the skewers on the grill can be tricky and may result in unevenly cooked fish.

HEALTH & BENEFITS

Fish is an excellent source of heart-healthy omega-3 fatty acids, which can help reduce inflammation and improve brain function.
Haddock is also a good source of selenium, a mineral that plays a key role in metabolism and immune function.
