1 cup yellow onion , peeled and chopped fine
1/2 teaspoon chopped fresh mint leaves

1 tablespoon chopped parsley
2 garlic cloves , peeled and crushed
2 teaspoons paprika
2 dashes Tabasco sauce
salt and pepper
6 poached eggs , not overcooked
