Ingredients

4 live dungeness crabs , about
4 green onions , chopped
6 tablespoons chopped fresh parsley
3 large eggs , hard boiled
1 medium fresh tomato , chopped
3 tablespoons lemon juice , freshly squeezed
1/2 teaspoon cayenne pepper
1/2 cup processed pimiento
1/2 teaspoon salt
1 large sweet red pepper , seeded and chopped
1/2 cup extra virgin olive oil
1/4 cup white vinegar
1/4 cup balsamic vinegar
10 ounces beer , of your choice ( drink the remainder )

Instructions

1.Fill a large pot 1/3 full of water, add salt and bring to a boil.

4.Once the crabs are cool, remove the meat and set it aside.
5.In a large bowl, whisk together the olive oil, white vinegar, balsamic vinegar, lemon juice, salt, and cayenne pepper.
6.Add the chopped green onions, red pepper, tomato, pimiento, and parsley to the bowl, and mix well.
7.Add the crab meat to the bowl, and toss gently until the meat is well coated in the marinade.
8.Cut the hard boiled eggs into wedges and arrange them around the edges of a serving platter.
9.Place the marinated crab meat in the center of the platter and pour the remaining marinade over the top.
10.Serve cold with your favorite beer.
