Ingredients

1 whole turkey , thawed
4 garlic cloves , minced
3/4 cup dry red wine
2 cups water
4 tablespoons paprika
1/2 teaspoon ground black pepper
2 tablespoons salt
1 teaspoon ground cumin
1 pinch cinnamon
1/2 lemon , juice of
paprika , for sprinkling
olive oil
6 tablespoons butter
3 tablespoons ketchup
1 large onion , quartered
5 lbs potatoes , peeled & halved
2 carrots , peeled & cut into chuncks
10 sprigs parsley , chopped
6 sprigs green onions , chopped
1/2 lemon , juice of
2 containers plain breadcrumbs
1 stale italian bun , cut into small pieces
2 tablespoons oil
3 garlic cloves , finely minced
2 tablespoons ketchup
2 tablespoons red pepper paste
3 tablespoons paprika
1 teaspoon ground cumin
1/4 teaspoon black pepper
5 dashes piri-piri , sauce ( or to taste ) or 5 dashes hot sauce ( or to taste )
1/2 teaspoon salt
4 cups boiling water ( more if required )
This dish is inspired by traditional Portuguese cuisine and brings bold and enticing flavors to your dinner table. Instructions

1.Preheat your oven to 350 F.
2.In a large bowl, mix together the garlic, red wine, water, paprika, black pepper, salt, cumin, cinnamon and lemon juice.
3.Rinse the turkey and pat it dry.
4.Place the turkey in a large baking dish lined with aluminum foil.
5.Rub the turkey with the paprika and olive oil.
6.Add the butter to the top of the turkey and place the quartered onion around the bird.
7.Add the potatoes and carrots around the turkey. Spread the parsley and green onions over everything.
8.Drizzle lemon juice over the ingredients and then pour the mixed wine and spices over everything.
9.Cover the pan with foil and bake for 2 hours.
10.Mix breadcrumbs and cream in a bowl.
11.Slowly add boiling water and mix until the stuffing is wet, but not soggy.
12.Heat oil in a pan, add minced garlic and cook until fragrant, then add ketchup, red pepper paste, paprika, cumin, black pepper, piri-piri and salt. Cook for 2 minutes.
13.Combine the mixture with the breadcrumb mixture and mix well. Allow the mixture to rest while the turkey continues to cook in the oven.
14.Remove the foil from the top of the turkey and sprinkle the stuffing on top.
15.Roast for another 30 minutes or until the turkey is cooked through.
16.Remove from the oven and let stand for about 10 minutes before carving.
