1/2 cup all-purpose flour
vegetable oil , for frying
2 tablespoons extra virgin olive oil
3/4 cup yellow onion , finely chopped
1 tablespoon minced garlic
2 anchovy fillets , minced
1/4 cup kalamata olive , pitted and chopped
3/4 teaspoon crushed red pepper flakes
1 can crushed tomatoes
1 tablespoon tomato paste
1/4 cup water
2 tablespoons flat leaf parsley , chopped
2 tablespoons cilantro , chopped
salt & freshly ground black pepper , to taste

Instructions

1.In a large bowl, mix together the ground veal, 1/2 cup of breadcrumbs, cilantro, parsley, buttermilk, 1 beaten egg, minced garlic, salt, crushed red pepper flakes, water, and 1/2 tablespoon of creole seasoning.
2.Divide the mixture into 8 equal portions and form balls. Flatten each ball to create a patty.
3.Place the remaining 1/4 cup of breadcrumbs in a shallow dish and lightly coat each patty with it.
4.Heat vegetable oil in a large, deep skillet over medium-high heat.
5.Fry each patty until golden brown and crispy, about 3-4 minutes on each side.
6.Remove the patties from the skillet and place them on a plate lined with paper towels to drain any excess oil.
7.In another skillet, heat extra-virgin olive oil on medium heat.
8.Add yellow onion, minced garlic, and anchovy fillets to the skillet. Cook until the onion is translucent, about 5-6 minutes.
9.Add the kalamata olives and crushed red pepper flakes and cook for another 2 minutes.
10.Add the crushed tomatoes, tomato paste, and water to the skillet and stir everything together.
11.Season with the remaining tablespoon of creole seasoning and salt & freshly ground black pepper.
12.Simmer the sauce for 15-20 minutes until it has thickened and the flavors have melded together.
13.Add the cooked meat patties to the sauce and allow them to simmer for 5-10 minutes until they are heated through and well coated with sauce.
14.Sprinkle with chopped parsley and cilantro before serving.
