Ingredients

1 teaspoon granulated sugar , plus
1/2 cup granulated sugar
1/2 cup lukewarm water
1 package active dry yeast or 1 tablespoon active dry yeast
3 eggs
1/4 teaspoon ground caraway
1 tablespoon ground cinnamon
1 teaspoon salt
2 teaspoons finely grated fresh lemon rind
1/2 cup raisins ( optional )
1/2 cup pine nuts ( optional )
1 cup water
2 cups all-purpose flour
1 egg yolk

Instructions

1.In a large bowl, dissolve 1 teaspoon granulated sugar into the lukewarm water. Sprinkle the yeast over the top. Leave to stand for 10 minutes.
2.Beat the eggs with the remaining 1/2 cup of granulated sugar until pale and fluffy. Mix in the caraway, cinnamon, salt, lemon rind, raisins, pine nuts (if using), and water until well combined.
3.Add the yeast mixture to the egg mixture, stirring to combine. Gradually add in the flour, mixing until the dough comes together in a ball.
4.Turn the dough out onto a floured surface. Knead for 10-15 minutes, until smooth and elastic.
5.Place the dough in a greased bowl, cover with a cloth, and leave to rise in a warm place for 1-2 hours, until doubled in size.
6.Preheat your oven to 180°C or 160°C if fan-forced.
7.Roll out the dough into a long, thick rope. Shape into a coil, tucking the end under the coil. Place in a greased baking tin.
8.Brush the dough with the beaten egg yolk.
9.Bake for 50-60 minutes, until golden brown and cooked through.
10.Leave to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
