3 red peppers
3 yellow peppers
3 tablespoons extra-virgin olive oil , plus extra for broiling
1 garlic clove
1 tablespoon white wine vinegar
2 tablespoons pine nuts , toasted
1 -2 tablespoon capers
6 basil leaves , shredded ( optional )

Instructions

1.Preheat the broiler to high heat.
2.Cut the peppers into quarters, discarding the stems, seeds and membranes.
3.Brush the peppers generously with olive oil, then place them skin side up on a baking sheet lined with foil.
4.Broil the peppers for 10-15 minutes, or until the skins are charred and the flesh is soft.
5.Remove the peppers from the oven and transfer them to a bowl. Cover the bowl tightly with plastic wrap and let the peppers steam for 10 minutes.
6.Once the peppers have cooled, remove the skins and slice the flesh into thin strips.
7.In a small bowl, whisk together the minced garlic, white wine vinegar, and remaining olive oil until combined.
8.In a large mixing bowl, toss the sliced peppers with the dressing until coated. Add the toasted pine nuts, capers, and shredded basil leaves, if using, and toss again.
