Ingredients

1/2 cup potato , peeled diced uncooked
1 cup boiling water
2 eggs
3 tablespoons butter , at room temperature
1 teaspoon lemon peel
3/4 cup sugar
1 teaspoon salt
4 1/3 cups bread flour
3 teaspoons active dry yeast
3/4 cup raisins
Portuguese Potato Bread with raisins is a traditional bread recipe that has been passed down through generations. Instructions

1.Place the diced potato in a bowl and pour boiling water over it. Let it cool to room temperature.
2.Add the eggs, butter, lemon peel, sugar, and salt to the bread machine pan.
3.Add cooled potato and water mixture and also bread flour and yeast on top of the liquid ingredients.
4.Select the Dough cycle and start the machine.
5.When the cycle finishes, remove the dough and place it in a large mixing bowl.
6.Knead in raisins for a minute or two.
7.Place the dough in a greased loaf pan and let it rise in a warm place for 20-30 minutes.
8.Preheat the oven to 350°F and bake the bread for 40 to 45 minutes.
9.Cool the bread before slicing & serving.
