Ingredients

1 medium onion , chopped fine
3 garlic cloves , chopped fine ( or more if you like )
2 tablespoons hot ground pepper , paste ( Pimenta )
1 tablespoon red pepper paste
2 tablespoons tomato paste
8 ounces beer ( preferably a lager or 3/4 cup white wine )
3 tablespoons chopped fresh parsley
1 -2 cup water
1 lb shrimp , 18/20 size peel on ( I prefer zipperback headless shrimp , although my husband prefers the traditional head on shrimp )

Instructions

1.Heat olive oil in a large skillet over medium heat.
2.Add chopped onion and cook until soft and translucent, about 5 minutes.

4.Pour in beer (or white wine) and bring to a simmer, stirring occasionally.
5.Cook for about 10 minutes until the liquid is reduced by about half.
6.Add water as needed to thin the sauce to your desired consistency.
7.Add shrimp and cook until pink and cooked through, about 3-5 minutes.
8.Sprinkle with fresh parsley and serve hot with white rice or bread.
