4 slices cantaloupe
3 slices tomatoes

Instructions

1.Break 3 jumbo eggs and beat them together in a large mixing bowl with a dash of fine sea salt, a dash of white pepper, 1 tablespoon of heavy cream, and a dash of Portuguese allspice
2.In a separate pan, sauté 3 tablespoons of chopped Maui onion, 3 tablespoons of chopped red bell peppers, and 1 tablespoon of chopped serrano pepper for about 2 minutes
3.Add the sautéed vegetables into the egg mixture and stir in 3 tablespoons of Rabacal grated cheese and 2 tablespoons of chopped cilantro
4.Pour the mixture back into the pan and cook on low heat for about 5-7 minutes until the underside is golden brown
5.Use a spatula to flip the omelet and cook for another 2-3 minutes until the other side is browned as well
6.Serve hot with 4 slices of cantaloupe and 3 slices of tomatoes on the side
