Ingredients

1/4 cup olive oil
1 large yellow onion , cut into 1/2-inch dice ( approximately 1 cup )
1 carrot , medium cut into 1/2 inch dice ( approximately 1/2 cup )
4 garlic cloves , minced
8 cups chicken broth
2 cups yukon gold potatoes ( cut into 1/2-inch dice )
1 teaspoon herbes de provence or 1 teaspoon ground thyme
1 bunch kale
1 can diced tomatoes with juice
1 can white beans , drained
1/2 lb pork sausage , smoked ( chourico , chorizo , kielbasa , etc . )

Instructions

1.In a large pot or Dutch oven over medium heat, heat the olive oil.
2.Add the onion, carrot, and garlic, cook for 5 minutes until onion is translucent.
3.Add the broth, potatoes, and herbes de Provence (or ground thyme) to the pot and bring to a boil.
4.Reduce heat and simmer until potatoes are cooked through, about 15 minutes.
5.While the soup is cooking, remove the inner rib from the kale leaves and slice them into thin ribbons.
6.When the potatoes are cooked, take about 2 cups of the soup and blend until smooth.
7.Return the blended soup to the pot. Add the sliced kale, diced tomatoes, white beans, and smoked sausage to the pot.
8.Simmer for about 10-15 minutes until sausage is cooked through and kale is wilted.
9.Add salt and pepper to taste.
