1 1/2 pounds lean ground beef
2 onions , chopped
2 cloves garlic , minced
1 can tomato paste
2 1/4 cups water
1 can peeled and diced tomatoes
1/3 cup dried parsley
1 teaspoon dried thyme

1 teaspoon dried basil
1 eggplant
1 onion , sliced
1/2 cup dry bread crumbs
1 cup grated Parmesan cheese

Instructions

1.Preheat the oven to 350°F.
2.In a large skillet, cook the ground beef over medium heat until browned, stirring occasionally.
3.Add the chopped onions and minced garlic to the skillet and cook until softened.
4.Stir in the tomato paste, water, peeled and diced tomatoes, dried parsley, dried thyme, dried oregano, and dried basil to the skillet and mix well.
5.Simmer the sauce for 10 minutes, while stirring occasionally.
6.Peel the eggplant and slice it into rounds.
7.Layer the sliced eggplant and sliced onion in the bottom of a 9x13 inch baking dish.
8.Pour half of the tomato sauce over the eggplant and onion layer.
9.Sprinkle half of the dry bread crumbs and half of the grated Parmesan cheese over the tomato sauce.
10.Brown the ground beef mixture on skillet over high heat and then slowly pour it over the bread crumbs and Parmesan cheese.
11.Repeat layers with the remaining eggplant, onion, tomato sauce, bread crumbs, and Parmesan cheese.
12.Bake, uncovered, for 30 to 35 minutes or until the eggplant is tender and the top is golden brown.
