1 1/4 cups sliced almonds , Blanched ( about 4 ounces )
1 cup powdered sugar
1/2 cup egg white , completely free of yolk
1/2 cup granulated sugar
1/2 teaspoon cream of tartar
1/4 teaspoon vanilla extract
1/8 teaspoon almond extract
6 1/2 tablespoons unsalted butter , slightly softened
1 1/4 cups powdered sugar
1/3 cup seedless boysenberry preserves or 1/3 cup jam
These Boysenberry-Filled Sandwich Cookies are perfect for any occasion. They are a twist on the classic meringue cookie, adding in a flavorful almond and jam sandwich filling. The cookie exterior is light and airy, while the jam and almond buttercream filling provide a satisfyingly sweet and nutty contrast. Instructions

1.Preheat the oven to 350°F (175°C).
2.In a food processor or blender, pulse the sliced blanched almonds until finely ground. Do not over-process the almonds or they will become oily. Transfer to a medium bowl.
3.Add the powdered sugar to the finely ground almonds and whisk to combine. Set aside.
4.In the bowl of a stand mixer fitted with the whisk attachment, beat the egg whites on medium-high speed until foamy and pale in color, about 1 minute.
5.Add the granulated sugar, cream of tartar, vanilla extract, and almond extract, and beat on high speed until stiff, glossy peaks form, about 3-4 minutes.
6.Gently fold the almond mixture into the meringue until just incorporated.
7.Line a baking sheet with parchment paper. Using a pastry bag fitted with a 1/2-inch (1-cm) round tip, pipe two-inch (5-cm) circles of the meringue onto the prepared baking sheet. Be sure to space them at least two inches (5 cm) apart.
8.Bake until the cookies are set but still soft to the touch and starting to brown around the edges, about 12-15 minutes, depending on your oven. Let the cookies cool completely on the baking sheet.
9.Meanwhile, in a medium bowl, beat the butter and powdered sugar together until light and fluffy. Add the boysenberry preserves or jam and mix until thoroughly combined.
10.Match similar size cookies together, then spread a layer of jam mixture on one of the flat sides of the cookies, and top with another cookie to form a sandwich.
