3 tablespoons olive oil , divided
2 1/2 cups vegetable stock ( or chicken stock or water )
2 bay leaves
1 cauliflower , cored and separated into large pieces
8 ounces elbow macaroni ( or shells , ziti , etc. , preferably whole grain )
1/2 cup emmenthaler cheese , grated ( or Gruyere , sharp cheddar or other )
1 tablespoon Dijon mustard
1/8 teaspoon nutmeg
black pepper
salt
1/4 cup parmesan cheese
1/2 cup breadcrumbs

Instructions

1.Preheat the oven to 375°F (190°C).

6.Meanwhile, cook the macaroni according to package instructions until it is al dente. Drain well and set aside.
7.In a large mixing bowl, combine the cauliflower puree, mustard, nutmeg, 2 tablespoons of olive oil, Emmenthaler cheese, salt, and black pepper.
8.Add the macaroni to the cauliflower mixture and mix until well combined.
9.Pour the mixture into the prepared baking dish.
10.Combine the bread crumbs, Parmesan cheese, and remaining olive oil in a bowl and sprinkle over the macaroni mixture.
11.Bake for 25-30 minutes until golden brown.
