Ingredients

1 pound beef tenderloin steaks , cut into 4 medallions
salt and pepper to taste
1 tablespoon olive oil
1 cup sliced fresh mushrooms
2 teaspoons butter
1 pinch salt
1 cup sliced sweet and hot peppers
4 cloves garlic , crushed
1/2 cup white wine
1/4 teaspoon dried oregano
1 cup tomato concasse ( see footnote for recipe link )
2 tablespoons chopped fresh oregano
1 teaspoon balsamic vinegar
1 pinch red pepper flakes
1 pinch salt and ground black pepper to taste

Instructions

1.Season both sides of the beef medallions with salt and pepper.
2.Heat olive oil in a large skillet over high heat.
3.Add the medallions and sear for about 2 minutes per side until browned.
4.Remove the medallions from the skillet and set aside.
5.In the same skillet, melt butter over medium heat and add sliced mushrooms and salt.
6.Cook until mushrooms are browned.
7.Add sliced peppers and garlic, and cook for an additional 2 minutes.
8.Add white wine and stir until completely evaporated.
9.Stir in tomato concasse, dried oregano, and fresh oregano.
10.Return the steak to the skillet and add balsamic vinegar, red pepper flakes, salt, and black pepper.
11.Cover the skillet and cook until the steak is cooked to your liking.
12.Serve and enjoy!
