1/4 cup ice-cold water
3 ounces bacon , finely chopped ( known as Speck in Switzerland )
3 tablespoons unsalted butter
1 1/2 lbs white onions , finely chopped ( about 3 )

1/2 cup milk
1/2 cup heavy cream
3 eggs
3 ounces grated gruyere cheese or 3 ounces good quality swiss cheese
fresh ground black pepper
freshly grated nutmeg

Instructions

1.Preheat the oven to 375°F.

10.Add salt to taste.
11.In a mixing bowl, combine the milk, heavy cream, and eggs. Mix well.
12.Spread the cooked onions over the crust in the tart pan.
13.Pour the egg mixture over the cooked onions in the tart pan.
14.Top the egg mixture with the grated cheese.
15.Sprinkle black pepper and nutmeg over the cheese.
16.Bake in the preheated oven for 35-40 minutes or until the custard is set.
17.Allow the tart to cool for a few minutes before serving.
