Instructions

1.Preheat oven to 450°F (230°C).
2.In a bowl, whisk together flour, salt, white pepper and parsley.
3.In another bowl, whisk together milk, eggs and melted butter until blended.
4.Gradually whisk milk mixture into flour mixture until combined but still slightly lumpy.
5.Stir in Roquefort cheese.
6.Pour batter into a non-stick muffin tin or grease a muffin tin with cooking spray.
7.Bake for 15 minutes without opening the oven door.
8.Reduce oven temperature to 350°F (175°C).
9.Bake for another 10-15 minutes, or until golden brown and puffy.
