Ingredients

1 1/2 cups all-purpose flour ( spoon flour into dry-measure cup and level off )
1 teaspoon salt
1 teaspoon baking powder
6 tablespoons unsalted butter , cold and cut into 8 or 4 tablespoons cold water
2 cups about 4 ounces coarsely grated swiss gruyere
2 tablespoons all-purpose flour
2 cups half-and-half or milk and heavy cream
3 large eggs
1/4 teaspoon fresh ground black pepper
1 pinch each of salt and freshly grated nutmeg

Instructions

1.Preheat your oven to 375 degrees Fahrenheit.
2.In a large mixing bowl, combine the flour, salt and baking powder. Add in the butter and work the mixture using a fork or pastry cutter until the consistency becomes crumbly.
3.Add cold water, 1 or 2 tablespoons at a time, mixing in between until the mixture remains moistened and forms a ball without sticking to your hands.
4.Roll the dough out into a round shape and place it into a greased baking dish spread it so that the dough covers the bottom and about 1-inch up the sides of the dish.
5.Toss the grated Gruyere with 2 tablespoons of flour and sprinkle the cheese over the bottom of the prepared crust.
6.In a separate bowl whisk together the half-and-half, eggs, black pepper, salt and nutmeg. Pour the mixture over the cheese and shake the pan lightly to distribute the mixture evenly across the dish.
7.Bake for roughly 30 minutes or until the filling is fluffy and golden. Cool the dish to room temperature on a wire rack before slicing and serving.
