Ingredients

2 lbs salmon fillets
3 tablespoons butter
1 teaspoon Old Bay Seasoning
2 tablespoons white wine
1 lb mushroom , cleaned and sliced 1/2 inch thick
2 packages fresh Baby Spinach
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper
freshly grated nutmeg , a pinch
1 1/2 cups freshly grated swiss cheese

Instructions

1.Preheat oven to 375 degrees Fahrenheit and season the salmon fillet with Old Bay seasoning.
2.In a sauté pan, melt butter and add sliced mushrooms. Cook until tender and golden brown. Add white wine and cook for another 2 minutes.
3.Add baby spinach, salt, pepper, and nutmeg to the pan. Cook until the spinach is wilted. Remove from heat and let it cool.
4.Grate Swiss cheese and set aside.
5.Roll out the pie crust into a 9-inch pie dish. Place salmon fillet in the dish with the cooked mushroom-spinach mixture on top. Layer with the grated Swiss cheese.
6.Cover the filling with another layer of pie dough and crimp the edges with your fingertips to seal the pie.
7.Bake for 45 minutes, or until the crust is golden brown. Let it cool for 10-15 minutes before slicing and serving.
