Ingredients

1 pie crusts

paprika
4 eggs

3 tablespoons flour
1/4 teaspoon salt
1/4 teaspoon mustard powder

Instructions

1.Preheat the oven to 375°F (190°C).
2.Layer the grated Swiss cheese in the bottom of the pie crust.
3.In a large skillet over medium heat, melt the butter and sauté the onions until translucent. Add the mushrooms and cook until they release their juices, about 5 minutes. Season with salt, pepper and thyme.
4.Spread the mushroom mixture on top of the cheese layer in the pie crust.
5.In a bowl, whisk together the eggs, milk, flour, salt, mustard powder, and paprika until the mixture is smooth.
6.Pour the egg mixture over the mushroom mixture in the pie crust.
7.Bake the quiche for 35-45 minutes, or until a knife inserted in the center comes out clean. Let it cool for 10 minutes before serving.
