Ingredients

2 lbs swiss chard , stemmed and cut crosswise into 1/2-inch strips I use a mixture of red , yellow and green chard
3 -4 garlic cloves , minced
2 cups water
1 cup frozen petite whole onion , thawed
6 skinless turkey breast cutlets , halved about 1 lb total
1/2 teaspoon ground pepper
1/2 cup dry white wine
2 teaspoons grated lemon zest
1 cup canned non-fat reduced-sodium chicken broth
2 teaspoons smoked paprika
2 tablespoons cornstarch

Instructions

1.Preheat the oven to 400°F.
2.In a large pot, combine the swiss chard, garlic, and water. Bring to a boil, then reduce the heat and simmer, covered, until the chard is tender, about 10 minutes.
3.Remove the chard from the pot with a slotted spoon and transfer to a 9x13 inch baking dish. Add the petite whole onions to the dish.
4.Season the turkey with pepper and add to the same pot that the chard was cooked in. Cook over medium-high heat until browned on both sides, about 2-3 minutes per side.
5.Add the white wine, lemon zest, chicken broth, and smoked paprika to the pot with the turkey. Bring to a boil, then reduce the heat and simmer until the liquid has reduced by one-third, about 10 minutes.
6.In a small bowl, whisk together the cornstarch and 2 tablespoons water. Add to the pot and whisk until the sauce thickens.
7.Pour the sauce over the chard and onions in the baking dish. Arrange the turkey on top of the vegetables.
8.Bake in the oven until the turkey is cooked through and the top is golden brown, about 15 minutes.
