1 jar spaghetti sauce
1/2 teaspoon dried oregano
1/2 cup grated Parmesan cheese , divided
1 egg
2 tablespoons grated Parmesan cheese
Baked Eggplant Alla Romana is a classic Italian dish that's perfect for a comforting and satisfying dinner. Instructions

1.Preheat the oven to 375°F. Grease a 9x13 inch baking dish with 2 tablespoons of olive oil.
2.Arrange the sliced eggplant into the prepared baking dish. Brush each slice with olive oil and sprinkle with salt.
3.In a large skillet, cook the ground beef, onion, and minced garlic over medium heat until the beef is browned and the onion is tender. Drain off any excess grease.
4.Stir in the spaghetti sauce, oregano, and 1/4 cup of Parmesan cheese.
5.Pour the meat sauce over the eggplant slices in the baking dish. Combine the remaining 1/4 cup Parmesan cheese with the egg. Pour the egg mixture over the meat sauce layer.
6.Cover the dish with foil and bake for 30 minutes. Remove the foil and return to the oven for an additional 20-25 minutes until the top is golden brown and bubbly. Let cool for 5-10 minutes before serving.
