1 stalk celery , finely chopped
2 garlic cloves , minced
2 tablespoons olive oil
1/2 cup barley , soaked and drained ( about 100g )
2 bay leaves
1 dash liquid smoke
1/2 cup dried cannellini beans ( about 100g )
5 cups vegetable stock
3 cups water
plain soy coffee creamer ( about 1/2 cup ) ( optional )
chives , finely sliced ( fresh or dried )

Instructions

1.In a large soup pot, sauté the onion, carrot, leek and celery in olive oil over medium heat for 5-7 minutes, until vegetables are softened but not browned.

3.Add the barley, bay leaves, liquid smoke, cannellini beans, vegetable stock, and water to the pot and stir to combine.
4.Bring the soup to a boil, then reduce heat to low and cover.
5.Simmer the soup for 1-1 1/2 hours, until the beans are tender and the barley is cooked.
6.Remove bay leaves from the pot.
7.Add soy coffee creamer, if using, and stir well to combine.
8.Season the soup to taste with salt and freshly ground black pepper.
9.Serve hot, topped with chives.
