Ingredients

2 lbs venison sirloin or 2 lbs round steaks , 1 inch thick
1/4 cup bacon fat or 1/4 cup other fat
1 garlic clove , crushed
1/4 cup onion , minced
2 cups water
1 bay leaf
1 cup tart fruit juice , cranberry or 1 cup apple
8 peppercorns
1 teaspoon salt
1 tablespoon butter
4 tablespoons flour
3/4 cup sour cream

Instructions

1.Cut venison steak into 5-6 pieces and pound each piece to 1/2 inch thickness.

3.Fry garlic and onions until onions are translucent. Add venison and brown on both sides.
4.Mix 2 cups of water, 1 cup of tart fruit juice, 1 bay leaf, 8 peppercorns, and 1 teaspoon of salt in a bowl and pour over the venison. Cover and let it simmer for 1 1/2 to 2 hours or until the meat is tender.
5.Remove the venison and keep warm. Strain the liquid and add water to make 2 cups.
6.Make a roux by melting 1 tablespoon of butter in a skillet, add 4 tablespoons of flour and cook for 2-3 minutes.
7.Gradually add the liquid to the roux, stirring constantly until it thickens. Add 3/4 cup of sour cream and heat through.
8.Serve the venison with the sauce over it.
