Instructions

1.Preheat the oven to 375°F (190°C). Grease a 10 x 15 inch (25 x 38 cm) baking sheet with butter and line with parchment paper.
2.In a large bowl, beat the egg whites and salt until stiff. Gradually add in the sugar and continue to beat until glossy.
3.In a separate bowl, beat the egg yolks and sugar (if making the sweet version) together until pale and thick.
4.Sift the flour and baking powder into the egg yolk mixture and mix until combined.

6.Pour the batter onto the prepared baking sheet and spread evenly. Bake for 10 minutes or until the cake is golden brown and springs back when lightly pressed.
7.While the cake is still warm, turn it out onto a clean linen towel dusted with icing sugar.
8.Roll up the cake and towel together and let cool for 10-15 minutes before unrolling and filling with your desired sweet or savoury filling.
