1/4 lb diced veal kidney ( optional )
1/2 lb fresh mushrooms , sliced
2 -3 shallots or 1 medium onion
2 tablespoons olive oil , divided use
2 tablespoons butter , divided use
1/4 cup chopped parsley
2 garlic cloves , minced
dry white wine
salt and pepper
heavy cream , room temp .

Instructions

1.Season the veal cutlet with salt and pepper.

4.Remove the veal from the pan and set aside on a plate.
5.Add the remaining butter and olive oil to the skillet and reduce heat to medium.
6.Add shallots or onion and mushrooms, and saute for 3-5 minutes until tender.
7.Add garlic and veal kidney (if using), and saute for an additional 2-3 minutes.
8.Deglaze the pan with a splash of white wine and scrape up any browned bits from the bottom of the pan.
9.Pour in the heavy cream and stir to combine.
10.Add chopped parsley and season the sauce with salt and pepper to taste.
11.Return the veal to the skillet and simmer for 3-5 minutes until the sauce has thickened slightly and the veal is cooked to your desired doneness.
