Ingredients

450 450 g spinach or 450 g baby spinach leaves
400 g ricotta cheese
6 tablespoons parmesan cheese , grated
3 eggs , lightly beaten
1 large onion , finely chopped
2 garlic cloves , peeled , crushed and finely chopped
3 tablespoons olive oil
1 sprig fresh tarragon , finely chopped
1/8 teaspoon nutmeg
salt & freshly ground black pepper

Instructions

1.Preheat oven to 180°C.
2.Rinse spinach or swiss chard well in cold water.
3.Remove the stalk from the spinach, roughly chop, and set aside.
4.Blanch the spinach in boiling water for 2 minutes, then drain and rinse under cold water to cool.
5.gently squeeze out any excess water and chop the spinach coarsely.
6.Heat the oil in a frying pan and cook the onion and garlic for 2-3 minutes until softened.
7.Season with salt and pepper.
8.Beat together the ricotta, parmesan, eggs, tarragon and nutmeg and add the onion mixture, and the chopped spinach or Swiss chard.
9.Mix well and transfer to a lightly greased and lined 20cm spring form tin.
10.Bake for 35-40 minutes or until set. Remove from oven and allow to cool slightly before removing from the tin.
11.Serve hot or cold.
