8 large swiss chard leaves , with stems
2 tablespoons extra virgin olive oil , divided
1 medium red onion , peeled and thinly sliced
1/2 teaspoon salt , divided
2 teaspoons fresh rosemary , minced
3 garlic cloves , peeled and minced
8 large eggs
fresh ground black pepper
4 ounces goat cheese , crumbled ( soft type )

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).

3.In a 10-inch ovenproof skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and 1/4 teaspoon of salt. Cook until the onion is softened, stirring occasionally, for about 8 minutes.
4.Add the remaining 1 tablespoon of olive oil, rosemary, and garlic to the skillet. Stir for about 1 minute.
5.Add the chopped swiss chard leaves and cook until they are wilted and tender, for about 5 minutes.
6.In a mixing bowl, beat the eggs with remaining 1/4 teaspoon salt and a pinch of black pepper. Stir in the crumbled goat cheese and pour the mixture over the cooked swiss chard in the skillet.
7.Place the skillet in the preheated oven and bake for about 20-25 minutes or until the eggs are set. Remove from the oven and let it cool for about 5 minutes before serving.
