Ingredients

1 lb swiss chard , well rinsed
2 teaspoons olive oil
1 lb cremini mushroom , quartered
3 garlic cloves , minced
1/4 teaspoon crushed red pepper flakes
1 jar marinara sauce
salt and pepper
1 large egg
1 container ricotta cheese
2/3 cup parmesan cheese , grated
1 package oven-ready no-boil lasagna noodles
2 cups mozzarella cheese , grated

Instructions

1.Preheat oven to 375°F.
2.Bring a large pot of salted water to a boil.
3.Add Swiss chard to boiling water and wilt, about 30 seconds. Drain chard, cool, and squeeze out excess water. Chop and set aside.
4.Heat olive oil in large skillet over medium-high heat. Add mushrooms, garlic, and red pepper flakes; cook 10 minutes until tender and golden.
5.Season with salt and pepper.
6.Mix egg, ricotta, Parmesan cheese and Swiss chard in a bowl; set aside.
7.Pour 1/3 of the marinara sauce in bottom of a 9x13 inch baking dish. Place a layer of noodles over sauce. Spoon 1/3 of the ricotta mixture over noodles; spread evenly. Sprinkle with 1/3 of the mozzarella cheese. Spoon half the mushroom mixture over cheese. Place another layer of noodles over mushrooms and repeat layering ending with a layer of noodles.
8.Pour remaining marinara sauce over noodles and sprinkle with the remaining mozzarella cheese.
9.Cover dish with foil and bake for 35 minutes. Remove foil and continue baking for an additional 10-15 minutes or until cheese is golden brown and bubbling.
10.Let lasagna stand and cool for a few minutes before slicing and serving.
