3 tablespoons butter , at room temperature
6 slices sourdough bread ( read Note )
salt ( if using salted butter , omit )
12 leaves watercress , leaves only
6 radishes , sliced thinly
1 small cucumbers ( optional ) or 1 small lemon cucumber , sliced thinly ( optional )

Instructions

1.In a small bowl, mix the butter and salt (if using) until well combined.
2.Lay out the bread slices and spread the butter mixture over each slice.
3.On 3 of the bread slices, layer the watercress leaves, radish slices, and cucumber or lemon cucumber slices (if using).
4.Place the remaining 3 bread slices on top, butter side down, to make 3 sandwiches.
5.Cut each sandwich into 4 small triangles or squares and serve.
