Ingredients

3/4 cup unsalted butter
2 tablespoons softened unsalted butter ( for greasing pan )
3/4 cup unbleached all-purpose flour
4 large eggs
1 pinch fine-grain sea salt
2/3 cup sugar
1 largelemon , zest
1 teaspoon vanilla extract
powdered sugar

Instructions

1.Preheat the oven to 375°F and grease the Madeleine pan.
2.Melt the butter in a small saucepan and let it cool.
3.Sift the flour and add salt to it.
4.Beat eggs and sugar together in a large mixing bowl until pale and thick.
5.Gently fold in the lemon zest and vanilla extract.
6.Sift in the flour mixture gradually whilst continuing to fold the mixture until it is smooth.
7.Add the cooled melted butter to the mixture and fold gently until it is well combined.
8.Pour the mixture into the prepared pan and bake for 10-12 minutes or until golden brown.
9.Remove the Madeleine pan from the oven and allow it to cool slightly.
10.Use a knife to gently remove the Madeleines from the pan and place them onto a cooling rack.
11.Once the Madeleines have cooled, dust them with powdered sugar and serve.
