Simca’s Passover Gateau Au Chocolat is a decadent chocolate cake that is perfect for Passover or any special occasion. It is named after the famous cookbook author, Simca Beck, and is made with bittersweet chocolate, unsalted butter, eggs, sugar, and ground almonds. This recipe is gluten-free, making it perfect for Passover or those with celiac disease or gluten intolerance. The cake has a dense, fudgy texture and is only moderately sweet. It is finished with a sweet chocolate-coffee glaze that is perfectly balanced with the richness of the cake. This recipe is a bit finicky, but the result is worth it: a delicious cake with a subtle almond flavor and a rich chocolatey taste.

6.Fold the egg whites into the chocolate mixture.
7.Pour the batter into the prepared cake pan and sprinkle the slivered almonds on top.
8.Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
