Ingredients

4 courgettes or 4 zucchini
2 aubergines or 2 eggplants
1 yellow pepper
1 red pepper
1 cup sorrel
2 cups low-fat creme fraiche
3 eggs
3 tablespoons olive oil
salt

Instructions

1.Preheat the oven to 180°C.
2.Peel the courgettes and aubergines, and slice them lengthwise. Then, season with salt and let sit for 10 minutes to drain excess water. Rinse and dry them with paper towels afterwards.
3.Slice the peppers into long strips.
4.Place the vegetables in baking dishes that have been greased with olive oil, trying to keep the colours separate. Then, add salt, pepper, & olive oil on top of each vegetable.
5.Bake for 30 minutes.
6.Blend the sorrel with the creme fraiche, eggs, salt & pepper in a blender.
7.Remove the vegetables from the oven and let them cool for a bit. Then, start creating the timbales by layering the vegetables in the baking dishes. Start with a layer of courgettes on the bottom, then add a layer of sorrel cream, then eggplants, red peppers, sorrel cream, yellow peppers, sorrel cream. Repeat this process until all ingredients are used up and each timbale has 4-5 layers of vegetables with sorrel cream in-between.
8.Bake the timbales for another 25-30 minutes at 180°C until the egg mixture is set, the vegetables are cooked, and the dish is golden brown.
9.Serve hot or cold.
