5 large onions ( peeled and sliced thin , save a handful for later )
1/8 cup water
3 sprigs fresh thyme
8 cups reduced-sodium chicken broth or 8 cups low sodium beef broth
1 teaspoon pepper
6 slices multi-grain bread ( toasted ) or 6 slices French bread ( toasted )
2 cups swiss cheese , Gruyere ( shredded ) or 2 cups cheddar cheese ( shredded )

Instructions

1.In a large soup pot, melt becel margarine and olive oil over medium heat.
2.Add onions, stir and cook until they start to caramelize, about 10 minutes.
3.Add 1/8 cup of water and continue cooking the onions for another 15-20 minutes until they turn golden brown.
4.Add chicken broth, fresh thyme, and pepper and bring to a simmer.
5.Reduce heat and let simmer for 15 minutes.
6.Preheat the broiler on high.
7.Place the toasted bread in the bottom of each bowl.
8.Ladle the soup on top of the bread.
9.Top with a handful of the remaining raw sliced onions.
10.Sprinkle grated cheese on the soup.
11.Place bowls under the broiler 4-5 minutes until cheese is melted and bubbly.
12.Serve hot.
