Ingredients

12 lbs goose ( fresh or thawed )
salt
pepper
2 teaspoons ground ginger
2 garlic cloves , thinly sliced
1 orange , sliced
1 stalk celery , chopped
1 carrot , chopped
1 small onion , chopped
8 bosc pears , peeled , each cut into quarters
1/3 cup fresh lemon juice
6 tablespoons sugar
1 1/2 cups pear liqueur
2 1/2 cups chicken stock
1 tablespoon flour

Instructions

1.Preheat oven to 450 degrees F.
2.Remove neck, giblets, and excess fat from inside the goose.
3.Season the inside and outside of the goose with salt, pepper, and ginger.
4.Stuff the cavity with garlic, orange slices, celery, carrot, onion, and 4 quartered pears.
5.Truss the goose with kitchen twine.
6.Place the goose breast side up in a roasting pan.
7.Mix lemon juice and sugar in a bowl until sugar is dissolved to create baste.
8.Roast the goose for 30 minutes at 450 degrees F.
9.Drain off excess fat, reduce oven temperature to 350 degrees F, and continue roasting, basting frequently with the lemon juice mixture, until the internal temperature of the thickest part of the thigh reaches 165 degrees F.
10.Remove the goose from the oven, cover it with aluminum foil, and let it rest for 30 minutes. Reserve the drippings from the roasting pan.
11.While goose is resting, prepare the sauce. Pour pear liqueur into the roasting pan and bring to a boil, whisking constantly.
12.Add chicken stock and whisk to combine.
13.Mix flour and 1/4 cup of water in a small bowl to create a flour and water slurry.
14.Whisk the flour slurry into the sauce and simmer until thickened and reduced.
15.Strain sauce through a fine mesh sieve.
