Ingredients

3/4 cup all-purpose flour , sifted plus
1 tablespoon all-purpose flour
3/4 cup unsweeteened alkalized cocoa powder ( dutch processed )
6 large eggs
1 cup sugar
2 tablespoons unsalted butter , melted and cooled
5 ounces semisweet chocolate or 5 ounces bittersweet chocolate
5 ounces milk chocolate
5 ounces white chocolate
1 1/2 cups heavy cream
3 3/4 cups heavy cream , whipped to soft peaks
1/4 cup sugar

Instructions

1.Preheat the oven to 350°F. Line a 9-inch springform pan with parchment paper.
2.Sift together flour and cocoa powder and set aside. Melt semisweet, milk and white chocolate in separate bowls over a double boiler. Keep them aside to cool down a bit.
3.In the stand mixture whisk the eggs and sugar until light and airy.
4.Sift in the cocoa and flour mixture and fold in slowly.
5.Mix in melted butter into the batter.- See Video (10:00)
6.Divide the batter into 3 equal parts and mix melted chocolate into the batter and combine well.- See Video (10:45)
7.Pour each flavor batter into the prepared springform pan and bake in oven for 22-25 minutes.- See Video (17:12)
8.Remove from the oven and cool to room temperature. Once cooled remove from pan and start layering with whipped cream as shown in the video.
9.Once all the layering is complete, let the cake chill for at least 1 hour.
10.Slice and serve chilled with your favorite topping.
