Ingredients

1 1/4 cups flour
1/3 cup unsalted butter
1 egg yolk
3 tablespoons ice water
1 pinch salt
1/4 cup unsalted butter
1 large red onion , halved and sliced
4 ounces cremini mushrooms , sliced
4 ounces shiitake mushrooms , stemmed and sliced
4 ounces oyster mushrooms , stemmed and sliced
2 teaspoons fresh thyme , chopped
1 egg
2 egg yolks
1/3 cup heavy cream
salt and pepper
Red Onion Tri-Mushroom Quiche is a quiche packed with a variety of mushrooms, including cremini, shiitake, and oyster mushrooms, along with red onions. Instructions

1.In a mixing bowl, combine flour, 1/3 cup butter, egg yolk, ice water and salt. Mix until a dough forms. Wrap the dough in plastic wrap and refrigerate it for 30 minutes.
2.Preheat the oven to 375°F.
3.Heat remaining unsalted butter in a large skillet over medium heat. Add red onion, mushrooms, and thyme. Cook, stirring frequently, until the vegetables are tender, about 10 minutes.
4.Beat egg and egg yolks in a separate bowl. Blend in heavy cream, salt and pepper.
5.Roll the chilled dough to fit a deep dish tart pan. Prick the dough all over with a fork and bake it for 15 minutes. Let it cool for 5 minutes.
6.Spread the cooked onion and mushroom mixture on the bottom of the tart crust. Pour the egg mixture over the vegetables. Reduce the oven temperature to 350°F and bake for 30-35 minutes,
7.Remove the quiche once it is golden brown, and let it cool before slicing and serving.
