Instructions

4.In a large bowl, beat the egg whites with an electric mixer on medium, adding the cream of tartar and salt, until foamy. Increase the speed to high and gradually add the remaining sugar, beating until stiff peaks form and the mixture is glossy.
5.Add one-third of the egg white mixture to the cocoa mixture and whisk until smooth. Gently fold in the remaining egg white mixture one-third at a time until no white streaks remain. Be careful not to deflate the mixture.
6.Spoon the mixture evenly into the prepared ramekins and smooth the tops with a spatula. Run your finger around the inside rim of each ramekin to create a small channel.
7.Bake until puffed and set, 18 to 20 minutes. Serve immediately with whipped cream or vanilla ice cream.
