4 -8 tablespoons margarine ( Becel Olive Oil type )
3 tablespoons all-purpose flour
2 cups plain soymilk ( Silk coffee milk is best )
1 -2 teaspoon kosher salt
1 -2 teaspoon fresh ground black pepper
1/2 teaspoon nutmeg
3 tablespoons lemon juice
1 egg yolk
1 -2 tablespoon Dijon mustard
1/2 cup cheese , grated ( like Parmesan , Asiago , Romano , Gruyere , Swiss or combo )
6 large eggs , with unused
1 egg white , from sauce above
1 pinch kosher salt ( as desired )
1 pinch fresh ground black pepper
1 baguette , cut into 8 pieces ( or 8 slices of any type of toasted bread )
8 slices prosciutto , sliced but not paper thin
2 tablespoons fresh basil leaves , chopped
