Ingredients

2 tablespoons butter

1 large Spanish onion , sliced
1 large white onion , sliced
3 leeks , white only , sliced , and rinsed well
1 large red onion , sliced

2 sprigs fresh thyme
1 large bay leaf
1 teaspoon fresh rosemary , chopped
1/2 cup sherry wine
1 cup champagne or 1 cup dry white wine
4 cups low sodium beef broth
1/2 teaspoon black pepper
6 slices bread , toasted
1/2 - 1 lb gruyere cheese
6 tablespoons parmesan cheese , grated
2 scallions , sliced
1 bunch fresh chives

Instructions

1.In a large pot, heat the butter and olive oil together over medium heat.
2.Add the brown sugar and stir until it melts. Add the onions, leeks, shallots, and garlic and cook, stirring occasionally for about 15 minutes, or until they are all soft.
3.Add the flour and stir well.
4.Add the thyme, bay leaf, rosemary, sherry wine, champagne or white wine, beef broth, and black pepper to the pot and stir.
5.Bring the mixture to a boil, reduce the heat to low, and let it simmer for 30 minutes.
6.Remove the bay leaf and thyme.
7.Preheat oven to 350°F.
8.To make the cheese crisps, arrange the gruyere cheese in small piles on a parchment lined baking sheet. Sprinkle with the parmesan cheese.
9.Bake for 12-15 minutes, until cheese melts and bubbles.
10.Remove from the oven and let the cheese crisps cool for 5-10 minutes before removing them from the parchment paper. Cut them into triangles or squares.
11.Ladle the soup into bowls, and place one or two cheese crisps on top of each bowl. Sprinkle with sliced scallions and minced chives.
