4 3/4 - 5 3/4 cups flour
1 tablespoon sugar
3 teaspoons salt
2 packages dry yeast
2 cups water
2 tablespoons shortening
1 tablespoon water
1 egg white

Instructions

1.In a large bowl, mix 2 cups flour, sugar, salt and yeast.
2.Heat 2 cups water and shortening in a saucepan until warm and shortening has melted.
3.Add water mixture to the flour mixture and beat well.
4.Add enough remaining flour to form a soft dough. Knead the dough on a floured surface for about 6-8 minutes.
5.Place the dough in a greased bowl, turning the dough to grease the top. Cover and let rise in a warm place for approximately 30 minutes.
6.Punch down dough and divide into thirds. Roll each into three thin 14-inch strips. Braid three strips together and pinch ends together. Repeat with the other two portions of dough. Place loaves on greased baking sheets and let rise in a warm place for another 15 minutes.
7.Mix egg white and tablespoon of water; brush on loaves. Make three diagonal cuts, 2-inches apart on each loaf.
8.Preheat oven to 375 degrees F and bake for 25-30 minutes or until golden brown. The bread should sound hollow when tapped.
