Ingredients

3 egg whites
100 g ground almonds
100 g icing sugar
100 g caster sugar ( superfine )
20 g caster sugar , extra ( superfine )
200 ml double cream ( Heavy cream in U.S.A . )
2 egg yolks
30 g sugar
1 teaspoon vanilla extract ( the original recipe says a pinch of powdered vanilla but I do n't know where to get that , unless it m )
demerara sugar , for sprinkling on top
Macarons Creme Brulee (also known as Creme Brulee French Almond Macaroons) are a delightful combination of two popular French desserts. Instructions

1.Preheat the oven to 150C/130C fan/gas 2.
2.In a large bowl, whisk the egg whites until stiff peaks form.
3.Add the ground almonds, icing sugar and 100g caster sugar to the bowl with the egg whites. Mix together until you get a stiff, glossy mixture.
4.Transfer the mixture to a piping bag with a 1cm nozzle. Pipe out the mixture into small, evenly sized circles on a baking tray lined with baking paper.
5.Leave the macarons for 30 minutes to form a skin on top. This will help them rise in the oven without cracking.
6.Bake the macarons in the preheated oven for 18-20 minutes until they are firm and have risen.
7.While the macarons are baking, make the creme brulee mixture. In a saucepan, heat the double cream over a medium heat until it starts to steam slightly.
8.In a bowl, whisk together the egg yolks, sugar and vanilla extract until they are combined.
9.Once the cream is steaming, slowly pour the mixture into the bowl with the egg yolk mixture. Whisk everything together until you get a smooth, creamy mixture.
10.When the macarons are done, take them out of the oven and let them cool.
11.Once the macarons are cool, place a small dollop of the creme brulee mixture on each macaron. Then place another macaron on top to form a sandwich.
12.Sprinkle demerara sugar on top of each macaron and use a blowtorch to caramelise the sugar until it is golden brown and crispy on top.
