Ingredients

190 g sugar
150 g liquid glucose or 150 g white corn syrup
35 g water
2 ml vanilla extract
30 g honey
250 ml 35 % cream , warmed slightly ( about 75C )
25 g unsalted butter
50 g cashews

Instructions

1.In a heavy-bottomed pan, combine the sugar, liquid glucose or white corn syrup, and water.
2.Stir over low heat until the sugar dissolves, then increase the heat to medium-high. Do not stir the mixture once it starts to boil.
3.Use a sugar thermometer to measure the temperature in the pan until it reaches 150C. Remove from heat and stir in the vanilla extract, honey, warmed cream, and butter.
4.Return the pan to low-medium heat and stir in the cashews. Cook until the mixture reaches 125C.
5.Pour the mixture into a greased and lined 20 x 20cm baking tray and allow to cool completely.
6.Cut into bite-sized squares and wrap individually in wax paper to enjoy later.
