Ingredients

14 ounces chicken livers
5 ounces butter , plus 2oz for the top of the parfaits
1 garlic clove , crushed
1 shallot , chopped
1 sprig thyme , plus sprigs to top
1 pinch Chinese five spice powder
2 tablespoons heavy cream
salt and pepper
bread , toasted to serve , ideally dense bread like brioche

Instructions

1.Rinse chicken livers and trim any connective tissues. Season with salt and pepper.
2.Heat 5oz of butter in a frying pan and fry the livers for 5-7 mins until golden brown on the outside and pink in the middle.
3.Add garlic, shallot, a sprig of thyme, Chinese five spice powder to the pan and cook for 1 min. Take off the heat and let it cool.
4.Remove the thyme sprig and transfer the mixture to a food processor. Add heavy cream and blend until smooth.
5.Keep blending while slowly pouring melted butter into the mix. Finally, scrape the mixture into a large bowl through a sieve for a smooth and silky texture.
6.Pour the mixture into six ramekin dishes and top with melted butter and thyme sprigs. Chill for at least 3 hours before serving with toasted bread.
