Ingredients

10 1/2 cups water
1/2 cup coarse kosher salt
3 tablespoons honey
2 tablespoons fresh lemon juice
1 lemon peel
1 bay leaf
3 fresh thyme sprigs
1 teaspoon fresh thyme leave
4 1/2 lbs chicken
2 -4 cups chicken broth , divided
1 tablespoon butter
1 tablespoon flour , all purpose
2 tablespoons whole grain mustard

Instructions

1.Preheat oven to 425°F.
2.In a large bowl, stir together water, coarse salt, honey, lemon juice, lemon peel, bay leaf, thyme sprigs and leaves until salt is dissolved.
3.Add the chicken and submerge. Let sit in refrigerator for 1-2 hours.
4.Remove from brine and pat dry.
5.Place chicken in a large roasting pan and brush with olive oil.
6.Roast until internal temperature of 165°F, approximately 1 hour and 20 minutes.
7.In a small saucepan, melt butter and whisk in flour. Cook for 1-2 minutes.
8.Slowly whisk in 1 cup of chicken broth. Cook until thickened, whisking constantly.
9.Whisk in whole grain mustard and thyme.
10.Carve chicken, serve with mustard-thyme sauce and a green salad on the side.
